History
1792 Aged Twelve Year Bourbon was crafted in a distillery built next to Thomas Moore Spring, back in 1879. There are two natural springs on the property that have limestone that filters the water, which is crucial for the bourbon-making process. Limestone filters out the iron and adds calcium to our water, making it perfect for creating bourbon. After we’ve taken our corn, rye, and barley, we cook, ferment, and distill the ingredients. The product comes up to the still, where it is carefully monitored. Following distillation, the bourbon is placed into barrels made from high-quality wood, allowing it to mature and develop complex flavors. The tail box in the distillation process is essentially a show box that allows you to see what’s coming out and taste the whiskey before they put it in a barrel made from copper. Over the years, 1792 has expanded its range to include several types of whiskey, each with its own distinct character, yet all embodying the rich heritage of the 1792 brand.
